Pimms o'clock

Updated: Apr 6, 2020

A Great British Summer is only complete with a pitcher of Pimms. It's so easy to make, but I like to add some blended strawberries to mine to give it an extra fruity kick. I made a couple of jugs to enjoy in the sunshine whilst enjoying the royal wedding celebrations this weekend.

You can add pretty much whatever fruit you fancy, but here's what goes in mine.

Pimms Cup:

  • One part Pimms

  • Three parts Lemonade

  • Lemons

  • Limes

  • Apples

  • Cucumber

  • Strawberries (to blend and to garnish)

If you want to skip blending the strawberries, Pimms have now brought out a strawberry flavoured version of their famous gin based drink to make things easier for us!

Chop up all the fruit. For a jug large enough for four people blend 5-6 strawberries and add to the pitcher with the Pimms and lemonade. Add all the chopped fruit and stir to serve. You can make your Pimms ahead of time to get the fruit infusing and adding to the flavour. Depending on whether you like it fizzy, add your lemonade just before serving to stop it going flat.

Serve and enjoy! Nothing tastes quite so quintessentially British.
