'Friyay' Cocktails

I feel as though Spring is really trying its best to peek through this week. We've had a little sunshine and milder temperatures, I no longer have five layers of clothes on at all times and I've even snuck out the house without a coat on once or twice.

I think Spring is my favourite time of year, longer evenings, the chance to get outdoors more and all the opportunities it brings to socialise and eat outside too.

At the weekend (and if I'm not working) George and I sometimes like to make cocktails in the evening to enjoy whilst dinner is cooking. One of our favourites is a Limoncello Spritz, its dead easy and super quick to make!

Limoncello Spritz:

  • One part Limoncello

  • Four parts Cava

  • Soda water to top up

  • Ice

  • Lemon peel to garnish (optional)

We bought this Limoncello back from our trip to the Amalfi Coast last summer, but you can get it at most local supermarkets.

Perfect for enjoying on a sunny evening and outside in the garden. It's also really easy to make up a big jug to serve for 6-8 people. Just use 200ml of Limoncello and the whole bottle of Cava. Slice up a lemon and add with lots of ice.
