All in One English Brekkie

A cooked breakfast is all well and good, until you gotta do the washing up! This recipe means you can whip it up all in one pan, and no frying!

Ingredients (for 2 people)

Four smoked bacon medallions

A can of baked beans

A can of chopped tomatoes

A handful of chopped button mushrooms

Four eggs

Mixed dried herbs (I also cut some fresh from the garden)

1 tsp paprika

Sliced farmhouse bread to mop up the pan!

Chipotle sauce to taste

Ground pepper to season

A cappuccino as big as your head on the side

  1. Pre-heat your oven to 200 degrees centigrade

  2. Lay your bacon in an ovenproof pan (I use this one)

  3. Toss in the mushrooms also and drizzle a tbsp of olive oil over them

  4. Place in the oven for ten minutes

  5. Add the beans, chopped tomatoes and paprika

  6. Stir together and then make four hollows in the sauce

  7. Crack the eggs into these hollows

  8. Put back into the oven for 10 minutes (longer if you don't like them runny)

  9. Sprinkle on your herbs and ground pepper, add hot sauce to your liking and butter your bread!

  10. Serve straight to table (on a heatproof mat!) and dig in
